Het belangrijkste gebruik van fosfaat in de voedingsindustrie

Volgens de Amerikaanse Food Chemical Pharmacopoeia (FCC) zijn de functies van:fosfatenin de voedingsindustrie zijn onder te verdelen in 15 categorieën:
1. Zuurmiddel: fosforzuur;
2. Antiklontermiddel: calciumfosfaat
3. Antioxidant: calciumhypofosfiet
4. Buffer: diammoniumfosfaat, ammoniumdiwaterstoffosfaat, calciumwaterstoffosfaat, calciumfosfaat, calciumpyrofosfaat, kaliumdiwaterstoffosfaat, dikaliumwaterstoffosfaat, natriumzuurpyrofosfaat, natriumdiwaterstoffosfaat, diwaterstoffosfaat Natrium, natriumfosfaat, natriumpyrofosfaat
5. Deegverbeteraar: diammoniumfosfaat, ammoniumdiwaterstoffosfaat, calciumdiwaterstoffosfaat, calciumwaterstoffosfaat
6. Emulgator: kaliumfosfaat, kaliumpolymetafosfaat, kaliumpyrofosfaat, natriumaluminiumfosfaat (alkalisch), natriummetafosfaat (onoplosbaar), natriumdiwaterstoffosfaat, dinatriumwaterstoffosfaat, natriumpolyfosfaat (glas), natriumpyrofosfaat

Uit het bovenstaande blijkt dat de functies vanfosfaatin de voedselverwerking hebben voornamelijk twee punten, de ene is een kwaliteitsverbeteraar en de andere is een voedingsversterker.
